  • 1 tablespoon vegetable oil
  • 3 quarts water (720g)
  • 1/4 cup baking soda
  • 1 large egg, lightly beaten
  • 1/3 cup coarse sea salt (96g)

Instructions

  1. Prepare the dough: In a stand mixer bowl, whisk warm water, yeast, and sugar. Let stand for 5 minutes until frothy. Add 3 cups flour, melted butter, and salt. Beat with paddle attachment on low for 1 minute. Switch to dough hook, add remaining flour gradually, and knead for 4-5 minutes until dough passes the windowpane test.
  2. First rise: Coat a large bowl with vegetable oil. Shape dough into a ball, place in the bowl, and cover. Let rise in a warm place for about 1 hour until doubled in size.
  3. Preheat and prepare: Heat oven to 425°F. Line 2 baking sheets with parchment paper and spray with cooking spray. Bring 3 quarts of water to a boil.
  4. Shape the bites: Divide dough into 4 equal parts. Roll each into a 22-inch rope and cut into 14 pieces.
  5. Prepare baking soda bath: Slowly stir baking soda into boiling water.
  6. Boil the bites: In batches, boil pretzel bites in the baking soda bath for 30 seconds. Remove with a slotted spoon and place on prepared baking sheets.
  7. Season and bake: Brush with egg wash, sprinkle with coarse salt, and bake for 15-18 minutes until golden brown. Cool for 5 minutes before serving.
