- 1 1/2 tablespoons light brown sugar
- 1 (0.25-ounce/7g) package active dry yeast
- 4 3/4 cups all-purpose flour (570g), divided
- 2 tablespoons unsalted butter, melted
- 2 teaspoons salt
- 1 tablespoon vegetable oil
- 3 quarts water (720g)
- 1/4 cup baking soda
- 1 large egg, lightly beaten
- 1/3 cup coarse sea salt (96g)
Instructions
- Prepare the dough: In a stand mixer bowl, whisk warm water, yeast, and sugar. Let stand for 5 minutes until frothy. Add 3 cups flour, melted butter, and salt. Beat with paddle attachment on low for 1 minute. Switch to dough hook, add remaining flour gradually, and knead for 4-5 minutes until dough passes the windowpane test.
- First rise: Coat a large bowl with vegetable oil. Shape dough into a ball, place in the bowl, and cover. Let rise in a warm place for about 1 hour until doubled in size.
- Preheat and prepare: Heat oven to 425°F. Line 2 baking sheets with parchment paper and spray with cooking spray. Bring 3 quarts of water to a boil.
- Shape the bites: Divide dough into 4 equal parts. Roll each into a 22-inch rope and cut into 14 pieces.
- Prepare baking soda bath: Slowly stir baking soda into boiling water.
- Boil the bites: In batches, boil pretzel bites in the baking soda bath for 30 seconds. Remove with a slotted spoon and place on prepared baking sheets.
- Season and bake: Brush with egg wash, sprinkle with coarse salt, and bake for 15-18 minutes until golden brown. Cool for 5 minutes before serving.
