Description

Irish Cream Fudge is a rich and creamy adult treat combining the smooth flavors of Baileys Irish Cream with sweet milk chocolate and fluffy marshmallow cream. Easy to prepare and perfect as a boozy dessert, this fudge needs no candy thermometer and sets beautifully for a luscious finish to any meal.

Ingredients

Units Scale

Fudge Base

  • 2 cups Granulated Sugar
  • 1/2 cup Heavy Whipping Cream
  • 1/2 cup Unsalted Butter
  • 1/4 cup Baileys Irish Cream

Chocolate Marshmallow Mixture

  • 7 ounce jar Marshmallow Cream
  • 12 ounces Milk Chocolate Chips

Instructions

  1. Prepare Pan: Line a 9-inch square dish with parchment paper and set aside to ensure easy removal of fudge after it sets.
  2. Combine Chocolate and Marshmallow: In a large mixing bowl, add the milk chocolate chips and marshmallow cream. Set this mixture aside while preparing the syrup.
  3. Make Sugar Syrup: In a large saucepan, combine granulated sugar, unsalted butter, and heavy whipping cream. Heat over medium-high heat, stirring constantly to prevent burning, until the mixture reaches a rolling boil. Continue boiling for 3-4 minutes to achieve the right consistency.
  4. Add Irish Cream: Remove the saucepan from heat and stir in the Baileys Irish Cream, blending thoroughly to incorporate the liqueur into the syrup.
  5. Mix Ingredients: Pour the hot syrup over the chocolate chips and marshmallow cream in the mixing bowl. Using an electric mixer, beat the mixture until the chocolate chips melt completely and the fudge becomes smooth and creamy. This should take about 1-2 minutes.
  6. Set Fudge: Pour the creamy fudge mixture into the prepared parchment-lined dish. Allow it to set at room temperature for about 4 hours or overnight to firm up adequately.

Notes

  • Irish Cream Fudge is intended as an adult dessert because of the Baileys Irish Cream liqueur.
  • This recipe doesn’t require a candy thermometer, making it simple and accessible.
  • For best results, allow fudge to set fully overnight for optimal texture.
  • Store fudge in an airtight container at room temperature or in the refrigerator.
