Description

These Instant Pot ribs are fall-off-the-bone tender with a perfect balance of sweet and smoky flavors. Using a homemade rub and barbecue sauce, these ribs are pressure-cooked to perfection and finished under the broiler for a delightful caramelized finish.

For the Ribs:

  • 1 rack baby back ribs or spare ribs, about 1 1/2 to 2 pounds
  • 1 cup water
  • 3 tablespoons apple cider vinegar
  • 1/2 teaspoon liquid smoke
  • 1/4 cup Homemade Barbecue Sauce or your favorite store-bought sauce, plus additional for serving

For the Rub:

  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon kosher salt
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Rinse and Pat Dry: Rinse the ribs and pat them dry, removing the membrane if needed.
  2. Prepare the Rub: Mix brown sugar, paprika, black pepper, salt, chili powder, garlic powder, onion powder, and cayenne. Rub onto the ribs.
  3. Cook in Instant Pot: Place ribs on trivet in Instant Pot with water, vinegar, and liquid smoke. Cook on high pressure.
  4. Broil: Brush ribs with barbecue sauce and broil briefly to caramelize.

Notes

  • Choose ribs under 2 pounds for tenderness.
  • Store leftovers in the refrigerator for up to 4 days.
  • Reheat gently in the oven or microwave.
  • Freeze ribs for up to 3 months.
