Description

This Instant Pot Mojo Pork recipe is a delicious and flavorful dish that is perfect for tacos or burritos. The pork is marinated in a zesty citrus mixture and then cooked in the Instant Pot until tender and juicy. Serve with your favorite toppings for a festive meal!

Pork:

  • 3 1/2 pounds boneless pork shoulder, cut into four pieces

Marinade:

  • 8 garlic cloves
  • 1 grapefruit, juiced
  • 1 lime, zested and juiced
  • 2 Tablespoons extra-virgin olive oil
  • 2 Tablespoons brown sugar
  • 2 teaspoons dried oregano or 1/2 tablespoon fresh oregano
  • 2 teaspoons ground cumin
  • 1 Tablespoon kosher salt
  • 1 bay leaf

For Serving:

  • Tortillas
  • Cilantro
  • Avocado
  • Hot sauce
  • Salsa
  • Lime Wedges

Instructions

  1. Prepare the Marinade: In a blender or mini food processor, combine the garlic, grapefruit juice, lime zest and juice, oil, brown sugar, oregano, cumin, and salt; process until blended.
  2. Marinate the Pork: Add the marinade to a ziplock bag along with the bay leaf and pork. Let sit at room temperature for 1 hour, or refrigerate overnight.
  3. Cook in Instant Pot: Place the pork and marinade in the Instant Pot. Cook on HIGH pressure for 80 minutes. Allow pressure to release naturally.
  4. Shred the Pork: Remove pork from Instant Pot, shred using forks. Boil cooking liquids for 5 minutes to reduce.
  5. Assemble: Toss shredded pork with cooking liquids. Serve in tortillas with desired toppings.

Notes

  • You can also cook this recipe in a slow cooker for 8 hours on low.
  • Adjust seasoning to taste before serving.
