Chicken:

  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon pepper or to taste
  • 2 pound chicken breasts about 4 to 6 breasts, boneless and skinless
  • 2 tablespoons olive oil

For Cooking:

  • 1 cup chicken broth, low sodium or no sodium added, or water

Instructions

  1. Prepare the Spice Mix: In a small bowl, combine Italian seasoning, garlic powder, smoked paprika, salt, and pepper.
  2. Season the Chicken: Rub the spice mix generously over each chicken breast.
  3. Sear the Chicken: Heat olive oil in the Instant Pot on the Sauté setting. Sear the chicken breasts on all sides in batches, if needed. Set aside.
  4. Cook the Chicken: Pour chicken broth into the Instant Pot, place the trivet inside, then add the chicken on top. Close the lid, set to Manual/High Pressure for 5 minutes (10 minutes for frozen chicken).
  5. Release Pressure: Allow natural release for 10 minutes, then quick release remaining pressure. Open the lid and transfer chicken to a cutting board. Let it rest for 5 minutes before slicing or serving.

Notes

  • If using frozen chicken, ensure they are separated for even cooking.
  • Water can be substituted for chicken broth if not making gravy.
  • Leftover chicken can be refrigerated for up to 4 days for convenient meals.
  • For longer storage, freeze chicken in airtight containers or wrap tightly in foil.
