These Hot Honey Halloumi Flatbreads are a delightful fusion of flavors – crispy halloumi cheese drenched in hot honey, topped with fresh veggies, and a creamy tahini yogurt sauce, all on a warm flatbread.

Ingredients for Hot Honey Halloumi Flatbreads:
- 2 medium flatbreads
- 8 oz (225 g) block of halloumi cheese, sliced into 6 slices
- 2–3 tbsp hot honey
- 1 handful rocket (arugula)
- 2–3 tbsp cherry tomatoes, quartered
- 1–2 tbsp pomegranate seeds
- 1–2 tbsp finely diced red onion
- 1–2 tbsp olives
- 1/2 red or green chili, sliced
- 2 tbsp cilantro (fresh coriander), parsley or a little bit of both, chopped
Ingredients for Tahini Yogurt Sauce:
- 4 tbsp Greek yogurt
- 2 tbsp tahini
- 1 tsp honey
- 1/4 lemon, juiced
- 2 pinches ground cumin
Instructions
- Prep Toppings: Get all toppings chopped/prepped and set out. Prepare tahini yogurt sauce by whisking all ingredients together. Adjust thickness with warm water.
- Heat Flatbreads: Warm flatbreads in a hot pan for 30 seconds each side. Spread some sauce on top, add arugula, and set aside.
- Fry Halloumi: Fry halloumi slices in oil until golden. Drizzle hot honey over the halloumi and caramelize.
- Assemble: Place three halloumi slices on each flatbread, add toppings, more sauce, and a drizzle of hot honey. Serve hot.
Notes
- For extra spice, add more chili or a sprinkle of chili flakes.
- Experiment with different toppings like roasted red peppers or sun-dried tomatoes.
