This Honey Mustard Baked Chicken Drumsticks recipe features juicy chicken legs coated in a delectable honey mustard sauce, baked to perfection alongside crispy smashed potatoes. Enhanced with fresh thyme and served with steamed broccolini, this dish offers a balanced and flavorful meal perfect for an effortless dinner.

Ingredients

Scale

For the Potatoes

  • 4 x 150g (5oz) potatoes
  • 2 tbsp (30g) olive oil or melted butter

For the Chicken

  • 8 chicken legs (about 1 kg / 2 lb)
  • 2 tsp olive oil
  • 2 tbsp Dijon mustard
  • 1 tbsp wholegrain mustard (or use more Dijon)
  • 1/4 cup honey
  • 1 garlic clove, minced
  • 1 tsp cornflour/cornstarch
  • Pinch of salt and pepper

To Garnish and Serve

  • Fresh thyme leaves or chopped parsley
  • Steamed broccolini

Instructions

  1. Preheat the Oven: Preheat your oven to 200°C (390°F) to prepare for baking the chicken and potatoes together efficiently.
  2. Prepare the Potatoes: Boil the potatoes until tender. Drain, then place them on a baking tray and gently smash each potato to flatten slightly. Drizzle with olive oil or melted butter, season with salt and pepper, then set aside.
  3. Make the Honey Mustard Sauce: In a bowl, combine the Dijon mustard, wholegrain mustard, honey, minced garlic, olive oil, cornflour, and a pinch of salt and pepper. Whisk until smooth and well blended to create a glossy sauce.
  4. Coat the Chicken: Pat the chicken legs dry with paper towels, then brush them generously with the honey mustard sauce, ensuring they’re well coated on all sides.
  5. Arrange on Baking Tray: Place the coated chicken legs on the same baking tray as the potatoes, ensuring they have enough room for even cooking.
  6. Bake: Bake in the preheated oven for about 45-60 minutes or until the chicken is cooked through with an internal temperature of 75°C (165°F) and the potatoes are crispy on the outside.
  7. Garnish and Serve: Remove the tray from the oven, sprinkle fresh thyme leaves or parsley over the chicken. Serve hot with steamed broccolini on the side for a complete meal.
