  • 1 and 1/4 cups (300ml) warm water (between 100–110°F, 38–43°C)
  • 2 and 1/4 teaspoons (7g) instant or active dry yeast (1 standard packet)
  • 2 Tablespoons (25g) granulated sugar
  • 3 Tablespoons (43g) unsalted butter, melted
  • 1 and 1/2 teaspoons salt
  • 3 and 1/3 cups (433g) bread flour (spooned & leveled), plus more as needed and for hands/work surface
  • Optional: 1/2 teaspoon garlic powder

Topping

  • 2 Tablespoons (28g) unsalted butter, melted
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • Optional for sprinkling on top: dried parsley or other favorite herb


Instructions

  1. Activate Yeast: Whisk the warm water, yeast, and sugar together in the bowl of your stand mixer. Loosely cover and let it sit for 5–10 minutes until foamy and frothy on top. If no stand mixer is available, use a large mixing bowl and wooden spoon or silicone spatula to mix by hand.
  2. Mix Dough Ingredients: Add melted butter, salt, 1 cup of bread flour, and garlic powder (if using) to the yeast mixture. Using a dough hook attachment, mix on low speed for 30 seconds. Scrape the bowl and add remaining flour, then beat on medium speed until dough forms and pulls away from the bowl sides, about 2 minutes. Add more flour 1 tablespoon at a time if dough is too wet.
  3. Knead Dough: Continue to knead in the mixer for 8-10 minutes, or knead by hand on a lightly floured surface for the same time until dough is soft, slightly tacky, and elastic. If sticky, lightly dust with flour one teaspoon at a time. The dough should pass the windowpane test or slowly bounce back when poked.
  4. First Rise: Lightly grease a large bowl and place the dough inside, turning to coat all sides. Cover the bowl and let the dough rise in a warm environment for 1.5–2 hours until doubled in size.
  5. Prepare for Shaping: Line two baking sheets with parchment paper or silicone mats and set aside.
  6. Shape Breadsticks: Punch down the dough and divide in half (each ~1 pound). Cut each half into 7 equal pieces (~2 ounces each). Roll each piece into an 8-inch long log on a lightly floured surface. Arrange 7 breadsticks on each baking sheet.
  7. Second Rise: Cover the shaped breadsticks and let them rise for about 20 minutes until slightly puffy.
  8. Preheat Oven: While the breadsticks rise, preheat oven to 400°F (204°C).
  9. Bake: Remove cover and bake breadsticks for 18–19 minutes until golden brown, rotating pans halfway through. If browning too fast, tent loosely with foil.
  10. Prepare Garlic Butter: Melt butter and stir in salt and garlic powder.
  11. Brush and Serve: Brush baked breadsticks with garlic butter. Sprinkle with dried parsley or herbs if desired. Let cool slightly before serving warm.
  12. Storage: Store leftovers tightly covered at room temperature for 1 day or in the refrigerator for up to 5 days. Reheat as needed.
