Oatmeal Apple Cake:
- 1 cup oats
- 1 large apple, peeled and chopped
- 3 Tbsp honey* or 3–4 tbsp dark brown sugar for a different twist
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 3 tbsp yogurt
- 2 eggs
- 1 Tbsp butter or coconut oil
Instructions
- Preheat the oven: Preheat the oven to 180C/350F.
- Prepare the batter: Blend all ingredients except 1/4 of the oats until smooth. Mix in the remaining oats.
- Bake: Line a baking pan with parchment paper, pour the mixture in, and bake for 20-30 minutes.
- Cool and store: Let the cake cool, slice, and store in the fridge for at least an hour before serving.
Notes
- Feel free to substitute honey with dark brown sugar for a different flavor.
- Adjust sweetness to your preference by tasting the batter before baking.
- Using a smaller baking pan may result in a thicker cake layer.
