  • 3 Tbsp honey* or 34 tbsp dark brown sugar for a different twist
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 3 tbsp yogurt
  • 2 eggs
  • 1 Tbsp butter or coconut oil

Instructions

  1. Preheat the oven: Preheat the oven to 180C/350F.
  2. Prepare the batter: Blend all ingredients except 1/4 of the oats until smooth. Mix in the remaining oats.
  3. Bake: Line a baking pan with parchment paper, pour the mixture in, and bake for 20-30 minutes.
  4. Cool and store: Let the cake cool, slice, and store in the fridge for at least an hour before serving.
