- 1 cup fresh or frozen green beans, sliced into thirds
Liquids and Canned Goods
- 32 ounces beef stock or broth
- 14½ ounces can diced tomatoes (fire-roasted preferred)
- 2 tablespoons tomato paste
Herbs and Seasonings
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon onion powder
- ½ teaspoon black pepper
Additional
- 1 tablespoon olive oil (optional, for very lean ground meat)
Instructions
- Brown the Meat and Saute Onion: Add the ground meat to a soup pot. Use a spatula to crumble it while cooking. If using very lean ground meat, add a tablespoon of olive oil to prevent sticking. Add the diced onion to the pot. Cook on medium-high heat, stirring occasionally, until the meat is completely browned and the onions are softened.
- Add Remaining Ingredients: Pour in the beef stock or broth, diced tomatoes, tomato paste, diced potatoes, carrots, green beans, garlic, thyme, oregano, salt, onion powder, and black pepper. Stir well to combine all ingredients evenly in the pot.
- Simmer the Soup: Cover the pot with a lid and reduce the heat to a simmer. Let it cook gently for 20 to 25 minutes, or until the vegetables are tender and the flavors have melded together.
- Adjust Seasoning and Serve: Taste the soup and add extra salt or pepper if desired for seasoning. Serve the soup warm, ideally in 1-cup servings if accompanying another dish, or 2 cups if eaten as the main meal.
