Meat and Vegetables
- 1 lb. Ground beef
- 1 lb. Sliced mushrooms
- 2 tsp. Minced garlic
- 2 Tbsp. Chopped fresh parsley
- Salt and pepper to taste
Dairy and Eggs
- 2 Tbsp. Unsalted butter
- 6 oz. Cream cheese, softened
- 3 Large eggs
- Parmesan cheese for garnish
Seasoning
- 1 tsp. Seasoning salt
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
- Brown the ground beef: In a skillet over medium heat, cook the ground beef until browned. Season with salt and pepper to taste. Drain off any excess fat and set the beef aside.
- Sauté the mushrooms: In the same skillet, melt 2 tablespoons of unsalted butter over medium heat. Add the sliced mushrooms and cook until tender, stirring occasionally.
- Add seasonings to mushrooms: Stir in the minced garlic, seasoning salt, chopped fresh parsley, and pepper to taste. Sauté the mixture for another minute to blend the flavors.
- Prepare the cream cheese sauce: Using a food processor or blender, blend the softened cream cheese and eggs together until smooth and creamy.
- Assemble the bake: Pour the cream cheese and egg mixture over the browned ground beef and mix gently. Transfer this mixture to the bottom of a well-greased 9×9 inch baking dish.
- Add mushrooms on top: Spread the sautéed mushroom mixture evenly over the ground beef mixture in the baking dish.
- Bake: Place the baking dish in the preheated oven and bake for 20 minutes until the casserole is set and slightly golden.
- Garnish and serve: Remove from oven and sprinkle parmesan cheese on top as a garnish. Serve warm and enjoy.
Notes
- Make sure to drain excess fat from the ground beef to keep the bake from becoming greasy.
- Using fresh mushrooms will give the best flavor but you can substitute with canned mushrooms if needed.
- Softening the cream cheese before blending helps achieve a smooth sauce without lumps.
- Parmesan cheese adds a nice salty finish but can be omitted or replaced with another hard cheese if desired.
- This dish can be prepared ahead and baked just before serving for convenience.
