Ingredients
Scale
Cookie Base
- 1 cup peanut butter
- ½ cup butter, softened
- ½ cup white sugar
- ½ cup brown sugar
- 1 egg
- 3 Tbsp milk
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- ¾ tsp baking powder
- ¼ tsp salt
Toppings
- 1-2 cups Reese’s Pieces, divided
- 1-2 cups miniature marshmallows
- Caramel topping (optional)
Chocolate Drizzle
- ¼ cup semi-sweet chocolate chips
- 1 tsp shortening
Orange Drizzle
- ½ cup powdered sugar
- 1 Tbsp water or milk
- 3 drops yellow food coloring
- 2 drops red food coloring
Instructions
- Cream Ingredients: Using a hand mixer, beat together the peanut butter, softened butter, white sugar, and brown sugar until the mixture is smooth and blended. Then, mix in the egg, milk, and vanilla extract thoroughly to combine.
- Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture into the peanut butter mixture, stirring until just combined. Fold in most of the Reese’s Pieces, reserving some for topping.
- Shape and Bake Cookie Base: Grease a 14-inch pizza pan well. Press the cookie dough evenly into the pan, spreading it uniformly. Sprinkle the remaining Reese’s Pieces over the top. Bake in a preheated oven at 375°F (190°C) for about 11 minutes until lightly set.
- Add Marshmallows and Continue Baking: Remove the pan from the oven and evenly scatter the miniature marshmallows over the cookie base. Return the pizza to the oven and bake for an additional 5-6 minutes or until the marshmallows are lightly browned and toasted. Remove and cool completely before adding drizzles.
- Prepare Chocolate Drizzle: In a small microwave-safe bowl, combine the semi-sweet chocolate chips and shortening. Microwave in 30-second intervals, stirring after each, then continue microwaving in 15-second bursts and stirring until the chocolate is fully melted and smooth.
- Prepare Orange Drizzle: In a small bowl, blend powdered sugar with water or milk until smooth. Add yellow and red food coloring drops and mix thoroughly until a uniform orange color is achieved.
- Decorate the Cookie Pizza: Drizzle the melted chocolate and orange icing over the cooled cookie pizza. Optionally, drizzle caramel topping as desired. Use a spoon or place drizzle mixtures in small sandwich bags with a tiny cut in the corner for more precise decoration.
Notes
- You can substitute crunchy peanut butter with creamy if desired for different texture.
- If you prefer a softer marshmallow topping, reduce the final baking time slightly.
- Allow the cookie pizza to cool completely before adding drizzles to prevent melting and blending of toppings.
- Use a non-stick pizza pan or line with parchment paper for easier removal.
- This recipe yields approximately 12 servings, perfect for Halloween parties or gatherings.
