Skewers:

  • 1/2 lb halloumi, cut into 1-inch cubes
  • 2 zucchini, cut into 1/2-inch thick rounds*
  • 2 yellow squash, cut into 1/2-inch thick rounds*
  • 3 bell peppers, cut into 1-inch pieces
  • 1 small red onion, cut into 1-inch chunks

Instructions

  1. Soak Skewers: If using wooden skewers, soak them in water for 30 minutes.
  2. Preheat Grill: Preheat a gas or charcoal grill on medium-high heat.
  3. Prepare Marinade: In a small bowl, whisk together olive oil, lemon juice, parsley, cumin, smoked paprika, onion powder, garlic powder, salt, and pepper.
