Ingredients

Units Scale

For the Chicken & Marinade

  • 1 pound thin sliced boneless, skinless chicken breasts
  • 2 limes, juiced
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • 2 teaspoons fresh mint, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Peaches

  • 2 peaches, sliced with skin on

For Grilling

  • Oil, for seasoning grill or skillet

Instructions

  1. Prepare the Marinade: In a mason jar, combine the lime juice, olive oil, honey, chopped mint, salt, and black pepper. Secure the lid and shake vigorously for 1-2 minutes until the ingredients are fully emulsified.
  2. Marinate the Chicken: Place the chicken breasts in a resealable plastic bag. Pour half of the prepared marinade into the bag, seal it, and lightly massage to coat the chicken. Allow the chicken to marinate for 10-15 minutes while you prepare the other ingredients.
  3. Prepare the Peaches: Wash and slice the peaches into wedges, leaving the skin on. Set aside until ready to grill.
  4. Preheat the Grill or Skillet: Set your grill or skillet to medium heat. Brush or spray the surface with oil to prevent sticking.
  5. Grill the Chicken and Peaches: Place the marinated chicken and peach slices on the hot grill or skillet. Cook the chicken for about 5 minutes per side, or until cooked through and juices run clear. Grill the peaches for the same amount of time, flipping them after 5 minutes to cook on the opposite side until they are tender and have grill marks.
  6. Toss Peaches in Marinade: Remove the grilled peaches and place them in a bowl. Drizzle with the remaining marinade and gently toss to coat well.
  7. Assemble and Serve: Transfer the grilled chicken to a serving platter. Spoon the grilled peach and mint mixture over the top of the chicken. Serve immediately while warm and enjoy!

Notes

  • For extra flavor, marinate the chicken for up to 1 hour if time allows.
  • Use firm, ripe peaches to avoid them turning mushy on the grill.
  • Feel free to add extra fresh mint or a sprinkle of chili flakes for a twist.
  • This dish pairs well with rice, quinoa, or a crisp green salad.
