For the Chicken & Marinade

For the Peaches
- 2 peaches, sliced with skin on

- Prepare the Marinade: In a mason jar, combine the lime juice, olive oil, honey, chopped mint, salt, and black pepper. Secure the lid and shake vigorously for 1-2 minutes until the ingredients are fully emulsified.
- Marinate the Chicken: Place the chicken breasts in a resealable plastic bag. Pour half of the prepared marinade into the bag, seal it, and lightly massage to coat the chicken. Allow the chicken to marinate for 10-15 minutes while you prepare the other ingredients.
- Prepare the Peaches: Wash and slice the peaches into wedges, leaving the skin on. Set aside until ready to grill.
- Preheat the Grill or Skillet: Set your grill or skillet to medium heat. Brush or spray the surface with oil to prevent sticking.
