Description

Grilled Mexican Street Corn, also known as Elote, is a flavorful and popular dish perfect for barbecues and summer gatherings. Sweet corn on the cob is grilled to charred perfection and then coated with a creamy, tangy mixture of mayonnaise, sour cream, and spices.


Ingredients

  • 3 tablespoons mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup cilantro, freshly chopped
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/4 cup cotija cheese, crumbled
  • 1 lime, juiced
  • Chili powder, to taste
  • 2 limes, cut into wedges, for garnish

Instructions

  1. Prepare Corn: Remove the husks of the corn, leaving the core attached.
  2. Grill Corn: Grill the corn on a hot grill or cast iron pan, turning frequently, until it starts to get slightly charred on all sides.
  3. Mix Creamy Sauce: In a small bowl, mix the mayonnaise, sour cream, and chopped cilantro.
  4. Coat Corn: Remove the corn from the grill and slather it with the mayonnaise mixture using a basting brush.
  5. Add Cheese and Lime: Squeeze the lime juice over the corn and sprinkle it generously with Parmesan cheese and cotija cheese. Sprinkle with chili powder to taste.
  6. Garnish and Serve: Garnish with lime wedges and serve immediately.

Notes

  • For a spicier version, add a pinch of cayenne pepper or hot sauce to the mayonnaise mixture.
  • If you don’t have cotija cheese, you can use feta or queso fresco.
  • Ensure the grill is hot enough to get a good char on the corn.
