- 4 ears corn
- 3 tablespoons mayonnaise
- 1/2 cup sour cream
- 1/4 cup cilantro, freshly chopped
- 1/2 cup Parmesan cheese, freshly grated
- 1/4 cup cotija cheese, crumbled
- 1 lime, juiced
- Chili powder, to taste
- 2 limes, cut into wedges, for garnish
Instructions
- Prepare Corn: Remove the husks of the corn, leaving the core attached.
- Grill Corn: Grill the corn on a hot grill or cast iron pan, turning frequently, until it starts to get slightly charred on all sides.
- Mix Creamy Sauce: In a small bowl, mix the mayonnaise, sour cream, and chopped cilantro.
- Coat Corn: Remove the corn from the grill and slather it with the mayonnaise mixture using a basting brush.
- Add Cheese and Lime: Squeeze the lime juice over the corn and sprinkle it generously with Parmesan cheese and cotija cheese. Sprinkle with chili powder to taste.
- Garnish and Serve: Garnish with lime wedges and serve immediately.
Notes
- For a spicier version, add a pinch of cayenne pepper or hot sauce to the mayonnaise mixture.
- If you don’t have cotija cheese, you can use feta or queso fresco.
- Ensure the grill is hot enough to get a good char on the corn.
- Serve immediately for best results.
- You can also use a grill pan on the stovetop if you don’t have an outdoor grill.
