Cabbage:

  • 1/2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper

Dressing:

  • 2 cloves garlic, minced
  • 2 tbsp minced shallot
  • 2 tsp lemon zest
  • 3 tbsp fresh lemon juice
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • 2 tbsp white wine vinegar
  • 1/2 cup olive oil
  • 3/4 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Grill the cabbage: Slice the cabbage into 1-inch thick slices, brush with olive oil, salt, and pepper. Grill each side until charred and tender, about 4-6 minutes per side. Set aside to cool.
  2. Make the dressing: Combine olive oil, vinegar, lemon zest, lemon juice, honey, Dijon mustard, garlic, shallot, salt, black pepper, and Parmesan cheese in a bowl. Whisk until combined.
