Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C) to prepare it for baking the galette potatoes.
  2. Prepare Butter Mixture: In a small saucepan or microwave-safe bowl, melt the salted butter and combine it with 2 tablespoons of olive oil, minced garlic, fresh chives, and chopped parsley. Stir well to blend all the flavors.
  3. Slice Potatoes: Using a mandoline slicer or a sharp knife, thinly slice the red potatoes to ensure even cooking and a crisp texture.
  4. Coat Potatoes: Place the sliced potatoes into a large bowl, then pour the butter and herb mixture over them. Toss gently to coat all the potato slices evenly.
  5. Prepare Skillet: Use 1 tablespoon of olive oil to thoroughly grease a cast iron skillet, making sure to cover both the bottom and sides to prevent sticking.
  6. Layer Potatoes: Arrange the coated potato slices in the skillet, overlapping each slice and forming concentric circles from the outer edge to the center. Sprinkle salt and pepper over each layer as you go for seasoning.
  7. Complete Layers: Continue layering the potatoes until all slices are used. For extra flavor, pour any remaining butter mixture from the bowl on top of the layered potatoes.
