  • 1/4 cup (40g) Plain / All Purpose Flour
  • 1 tsp Garlic Powder
  • 1 tsp Salt, plus more to taste
  • 1/2 tsp Black Pepper, plus more to taste

Sauce

  • 1/2 cup (120ml) Chicken Stock
  • 6 tbsp (90g / 3.2oz) Unsalted Butter, divided into tablespoons
  • 2 cloves Garlic, minced or finely diced
  • 1 tbsp Fresh Parsley, finely diced
  • 1 tbsp Olive Oil
  • 1 Lemon, divided into 4 wedges for serving


Instructions

  1. Prepare the flour mixture: In a shallow dish, combine the plain flour, garlic powder, salt, and black pepper. Mix well to evenly distribute the seasoning.
  2. Butterfly chicken breasts: Slice each chicken breast through the centre to create four even pieces. Dredge each piece carefully in the seasoned flour, pressing gently to ensure an even coating. Shake off any excess flour and place the coated chicken to one side.
  3. Fry the chicken: Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large pan over medium-high heat. When hot, add the chicken breasts and fry them until golden on each side and cooked through (about 3-5 minutes per side depending on thickness). Remove the chicken from the pan and set aside.
  4. Prepare the garlic butter sauce: Lower the heat to medium. Add the minced garlic to the pan and fry for 1-2 minutes until it just begins to brown.
