Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350ºF. Spray a 9×13-inch glass baking dish with non-stick cooking spray and set aside.
  2. Cook Beef and Onions: In a large skillet, crumble the ground beef and add the diced onions. Cook over medium-high heat, stirring often, until the beef is fully browned and the onions are tender. Drain off any excess fat if desired to reduce greasiness.
  3. Add Seasonings and Simmer: Stir in the taco seasoning mix and cream style corn until well combined. Then add the salsa and kidney beans. Stir everything together, bring the mixture to a simmer, and cook for 3 to 4 minutes, stirring frequently to blend the flavors.
  4. Assemble Casserole Layers: Pour half of the Fritos corn chips evenly into the bottom of the prepared baking dish. Sprinkle 1 cup of shredded cheese over the chips. Spread the meat mixture evenly on top. Add the remaining corn chips over the meat, then top with the remaining 1 cup of shredded cheese.
