Description

French Onion Meatloaf is a savory twist on a classic dish, combining the flavors of caramelized onions and Gruyere cheese with a moist and flavorful meatloaf.

For Caramelized Onions:

  • 2 tbsp butter or bacon grease
  • 1 large white onion, cut in half lengthwise and thinly sliced
  • Salt
  • 1 tsp fresh thyme leaves

For Meatloaf:

  • 1 lb ground beef
  • 1 lb ground pork or another lb ground beef
  • 1 cup ground pork rinds or 1/2 cup almond flour
  • 2 tsp onion powder
  • 3/4 tsp black pepper
  • 1 large egg
  • 4 ounces Gruyere cheese, grated

Instructions

  1. Caramelize Onions: In a large skillet over low heat, melt the butter or bacon grease. Add sliced onions, salt, cook until golden brown.
  2. Prepare Meatloaf: Preheat oven to 350F. Combine ground meat, pork rinds, onion powder, pepper, salt, egg, and half of onions. Form loaf on baking sheet.
  3. Bake: Bake for 40-50 minutes at 350F until internal temp reaches 160F.
  4. Top and Melt Cheese: Top meatloaf with cheese and remaining onions. Return to warm oven for 5 minutes to melt cheese.
