For Caramelized Onions:
- 2 tbsp butter or bacon grease
- 1 large white onion, cut in half lengthwise and thinly sliced
- Salt
- 1 tsp fresh thyme leaves
For Meatloaf:
- 1 lb ground beef
- 1 lb ground pork or another lb ground beef
- 1 cup ground pork rinds or 1/2 cup almond flour
- 2 tsp onion powder
- 3/4 tsp black pepper
- 1 large egg
- 4 ounces Gruyere cheese, grated
Instructions
- Caramelize Onions: In a large skillet over low heat, melt the butter or bacon grease. Add sliced onions, salt, cook until golden brown.
- Prepare Meatloaf: Preheat oven to 350F. Combine ground meat, pork rinds, onion powder, pepper, salt, egg, and half of onions. Form loaf on baking sheet.
- Bake: Bake for 40-50 minutes at 350F until internal temp reaches 160F.
- Top and Melt Cheese: Top meatloaf with cheese and remaining onions. Return to warm oven for 5 minutes to melt cheese.
