- 2 (16-ounce) packages of vegan buttermilk biscuits
Sugar & Spice Mix
- ⅓ cup granulated sugar
- 3 tablespoons cinnamon

Caramel Topping
- ¼ cup brown sugar
- ¼ cup vegan butter, melted
Instructions
- Preheat and Prepare Pan: Preheat the oven to 350°F (175°C) and grease a bundt pan thoroughly to prevent sticking.
- Cut Biscuits: Remove the vegan buttermilk biscuits from their packages and cut each biscuit into 4 even pieces to create bite-sized chunks.
- Coat Biscuit Pieces: In a large bowl, combine the cinnamon and granulated sugar. Add a handful of biscuit chunks into the bowl and toss well to coat completely with the cinnamon-sugar mixture. Repeat until all biscuit pieces are covered.
- Layer Ingredients: Place half of the chopped apples at the bottom of the bundt pan, then add half of the coated biscuit chunks on top. Repeat by adding the remaining apples and finally the rest of the biscuit pieces on top.
- Make Caramel Drizzle: In a small bowl, whisk together the brown sugar and melted vegan butter until it forms a thick, caramel-like consistency.
- Drizzle and Bake: Evenly drizzle the caramel mixture over the layered dough and apples in the bundt pan. Bake in the preheated oven for 40 minutes, or until the top is golden and cooked through.
- Cool and Unmold: Remove the monkey bread from the oven and allow it to cool in the pan for 2 hours to set properly. Once cooled, place a plate over the bundt pan and quickly invert to release the monkey bread onto the plate.
