  • 2 cloves garlic, minced
  • 1 head green cabbage (about 2 lbs.), core removed and cut into 1½” bite-sized pieces
  • 1 tsp mustard (spicy brown or Dijon, optional)
  • ½ tsp kosher salt
  • ½ tsp freshly ground black pepper


Instructions

  1. Cook Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook according to the package instructions until al dente. Drain the noodles thoroughly and set them aside.
  2. Sauté Kielbasa: In a deep nonstick skillet, melt 2 tablespoons of butter over medium-high heat until bubbly. Add the kielbasa pieces and sauté for about 3 minutes until they brown and crisp up. Remove the kielbasa with a slotted spoon and place it on a plate.
  3. Cook Vegetables: Using the same skillet with the rendered kielbasa fat, add the chopped onions, minced garlic, cabbage pieces, and 2 more tablespoons of butter. Reduce the heat to medium and sauté, stirring frequently, until the cabbage is tender, which takes about 8 minutes depending on your preference for tenderness.
  4. Combine and Season: Return the cooked noodles and kielbasa to the skillet with the cabbage mixture. Toss everything together to combine and warm through. Stir in the remaining 2 tablespoons of butter, add the mustard if using, and season with kosher salt and freshly ground black pepper to taste.
