- 2 pounds of potatoes
- 6 tablespoons of butter
- 1/4 cup milk
- 1/4 cup heavy cream
- 1 tablespoon butter (for cooking kale)

- 2 green onions, chopped
Instructions
- Boil the Potatoes: In a large pot, bring enough water to a boil to cover the potatoes. While waiting, wash and peel the potatoes, then cut them into similar-sized pieces for even cooking. Once boiling, add the potatoes, cover with a lid, and cook for about 20 minutes or until very tender.
- Prepare the Kale: Wash the kale thoroughly, remove the tough center stem, and chop it into small pieces using a sharp knife.
- Mash the Potatoes: Once the potatoes are cooked, drain the water and return them to the pot. Use a potato masher to mash the potatoes until smooth.
- Add Dairy: Gradually add the milk, heavy cream, and 6 tablespoons of butter to the mashed potatoes. Continue mashing until fully incorporated and smooth in texture.
- Sauté the Kale: Heat 1 tablespoon of butter in a pan over medium heat. Cook the chopped kale for about 2 minutes until it is slightly wilted.
- Combine and Serve: Stir the sautéed kale into the mashed potatoes until well combined. Finally, top the Colcannon with the chopped green onions and serve hot.
