Instructions
- Cook the Rice: In a medium saucepan, bring the chicken broth to a boil. Add the rice and butter, reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and liquid is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
- Prepare the Beef Mixture: While the rice cooks, heat a skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- Season the Beef: Add chili powder, paprika, cumin, cayenne pepper, oregano, salt, and pepper to the cooked beef. Stir well to evenly coat the meat with spices. Pour in the picante sauce and combine. Cook for another 2-3 minutes until heated through and flavors meld.
- Combine Beans and Corn: In a separate bowl, mix together the drained black beans and rinsed fire-roasted corn. You can warm them slightly if desired or leave them at room temperature.
- Assemble the Taco Bowls: Divide the cooked rice between bowls. Top each with the seasoned beef mixture, the black bean and corn medley, and then garnish with fresh cilantro and a squeeze of lime juice for brightness.
