Description

This easy chicken stew is a hearty and comforting dish perfect for chilly days. Made with simple, everyday ingredients like chicken breasts, fresh vegetables, and aromatic herbs, it’s a soul-warming meal ready in just one hour.

Ingredients

Scale

Stew Base

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 medium onion, chopped
  • 2 sticks celery, chopped
  • 3 medium carrots, peeled and sliced
  • 3 cloves garlic, minced
  • 2 tablespoons flour

Broth and Seasonings

  • 3 cups chicken broth or stock
  • 1/2 cup heavy or whipping cream
  • 1/2 teaspoon Italian seasoning

Vegetables and Protein

  • 8 ounces mushrooms (white or cremini), sliced
  • 2 large Russet potatoes, peeled and diced
  • 1.5 pounds uncooked chicken breasts
  • Salt and pepper to taste

Instructions

  1. Sauté Vegetables: Add the olive oil, butter, chopped onion, celery, carrots, and minced garlic to a Dutch oven or soup pot. Sauté over medium-high heat for 5-7 minutes until the vegetables are softened and fragrant.
  2. Add Flour: Stir in the flour and cook for about one minute to remove the raw flour taste and help thicken the stew.
  3. Incorporate Liquids and Seasonings: Gradually stir in the chicken broth, ensuring the flour dissolves completely to avoid lumps. Then add the heavy cream, Italian seasoning, sliced mushrooms, diced potatoes, and raw chicken breasts to the pot.
  4. Simmer the Stew: Increase the heat to high and bring the stew to a gentle boil. Reduce the heat to medium-low and simmer with the lid slightly open for 25 minutes. Stir occasionally to prevent sticking and allow flavors to meld.
  5. Shred Chicken and Season: Remove the chicken breasts from the pot, cut them into bite-sized pieces, and return them to the stew. Taste and season with salt and pepper as desired. Serve hot.
