Instructions

  1. Prepare Pasta and Chicken: Bring a large pot of salted water to a boil for the pasta. Meanwhile, cut chicken breasts into small ½ inch cubes. Season them on both sides with 1 teaspoon kosher salt and ¼ teaspoon black pepper to taste.
  2. Cook Chicken: Heat a very large skillet over high heat. When hot, spray the skillet with olive oil and add half the chicken. Cook until browned on all sides and no longer pink inside, about 2 minutes. Transfer to a plate and repeat with the remaining chicken. Set aside and reduce heat to medium-low.

  5. Cook Pasta and Combine: Add pasta to the boiling water and cook according to package directions until al dente. Reserve ½ cup of pasta cooking water, then drain the pasta. Toss the drained pasta with the cooked chicken in the skillet. Add baby spinach and cook for 1 minute, gently tossing with the sauce. Add some reserved pasta water as needed to loosen the sauce.
  6. Garnish and Serve: Finish the dish with freshly chopped parsley. Serve with plenty of grated Parmesan cheese if desired for added flavor.
