  • 1 tablespoon unsalted butter
  • 12 ounces beef chuck (stew meat), diced 1/2-inch
  • 1 1/2 cups diced potatoes (1/2-inch dice)
  • 3/4 cup diced carrots (1/4-inch dice)
  • Water, as needed
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon crushed rosemary
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon oregano
  • 3 tablespoons unsalted butter
  • 1/2 cup finely diced onion
  • 2 tablespoons all-purpose flour

  • 1 egg
  • 1 tablespoon milk


Instructions

  1. Prepare the Pastry: Combine the cold, cubed butter with the flour, sugar, and salt in a mixing bowl. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs. Gradually stir in buttermilk, starting with 1/2 cup and adding more as needed, until the dough just comes together. Be careful not to overwork the dough.
