Ingredients

Scale

Main Ingredients

  • 2 tbsp olive oil
  • 1 small yellow onion, diced
  • 1 lb ground beef
  • 3 cloves garlic, minced
  • 3 tbsp chili powder
  • 1 tbsp cumin
  • 2 tsp garlic powder
  • 1.5 tsp salt
  • 1/2 tsp pepper
  • Pinch cayenne powder
  • 1 15oz can diced tomatoes
  • 1 15oz can tomato sauce
  • 1 15oz can pinto beans
  • 1 15oz can kidney beans
  • 3 tbsp tomato paste
  • 2 tbsp honey
  • 2 cups beef broth

Optional Toppings

  • Sour cream
  • Greek yogurt
  • Cheese
  • Green onion
  • Fritos
  • Cilantro

Instructions

  1. Heat Oil and Cook Onion: In a large dutch oven or sauce pot, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the diced onion and cook for 2-3 minutes until slightly soft.
  2. Cook Ground Beef and Add Garlic: Add 1 pound of ground beef to the pot with the onions and cook for another 2-3 minutes until the meat begins to brown. Then add the minced garlic and stir in for a minute more.
  3. Add Spices: Incorporate 3 tablespoons chili powder, 1 tablespoon cumin, 2 teaspoons garlic powder, 1.5 teaspoons salt, 1/2 teaspoon pepper, and a pinch of cayenne powder, stirring well to coat the meat and onions evenly with the spices.
  4. Add Liquids and Beans: Pour in one 15oz can of diced tomatoes, one 15oz can of tomato sauce, one 15oz can of pinto beans, one 15oz can of kidney beans, 3 tablespoons tomato paste, 2 tablespoons honey, and 2 cups beef broth. Stir all ingredients until fully combined.
  5. Simmer the Chili: Bring the mixture to a light boil over medium-high heat, then reduce the heat to medium-low. Allow the chili to simmer uncovered for 30 minutes, stirring occasionally to prevent sticking and to meld the flavors.
  6. Serve with Toppings: Once the chili is thickened and flavorful, serve hot topped with optional sour cream, Greek yogurt, cheese, green onions, Fritos, cilantro, or any preferred toppings.

Notes

  • This beef chili is a hearty and easy meal that combines spices, tomatoes, beans, and beef to create a rich flavor perfect for cold days or casual family dinners.
  • Simmering the chili helps deepen the flavor and tenderize the beans and meat.
  • Feel free to adjust the spice levels by adding more cayenne or chili powder to taste.
  • For a thicker chili, simmer longer or add a bit more tomato paste.
  • Leftovers reheat well for a quick meal the next day.
