Instructions
- Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon. Stir well to evenly distribute the spices and leavening.
- Add Wet Ingredients and Fold in Apples: Add the unsweetened applesauce and soy milk to the dry ingredients and mix just until combined, taking care not to overmix. Gently fold in the diced apples to maintain a light batter.
- Heat Oil for Frying: Heat about 2 inches of vegetable oil in a large, heavy skillet or pot to 375°F (use a thermometer for accuracy).
- Fry the Fritters: Scoop about 1/3 cup of the batter and carefully place it into the hot oil, flattening it slightly. Cook for 2-3 minutes on one side until golden brown, then flip with tongs and cook for an additional 1-2 minutes. Remove and drain on a cooling rack placed over parchment to catch drips.
- Repeat Frying: Continue frying the remaining batter in batches until all fritters are cooked, then turn off the heat.
- Prepare the Glaze: Whisk together powdered sugar, soy milk, and vanilla extract in a small to medium bowl until smooth.
