For the Date Caramel:
- 1 large apple (Honeycrisp recommended)
- 2 Tablespoons date caramel
- 2 Tablespoons unsweetened coconut flakes
- 2 Tablespoons chocolate chips (dairy-free, if needed)
- 1/2 teaspoon coconut oil
Instructions
- Prep date caramel if you haven’t already.
- Toast coconut by heating in a pan over medium-low heat for 3-6 minutes, stirring continuously.
- Cut apple into 1/4″ slices and remove the core using a melon baller.
- Spread date caramel on each apple slice, then sprinkle with toasted coconut.
- Melt chocolate with coconut oil in the microwave, drizzle over the apple slices.
To make date caramel, blend dates with a bit of water until smooth.
