Description

Indulge in these irresistible Crockpot Chocolate Peanut Clusters, a delightful no-fuss treat combining salty peanuts with rich semisweet, peanut butter, and white chocolate chips. Slow-cooked to melty perfection and formed into bite-sized clusters, they make a perfect snack or party favor that can be stored or frozen for later enjoyment.

Ingredients

Scale

Peanuts

  • 16 ounces (454g) unsalted dry roasted peanuts
  • 16 ounces (454g) salted cocktail peanuts

Chocolates

  • 24 ounces (680g) semisweet chocolate chips
  • 20 ounces (567g) peanut butter chips
  • 12 ounces (340g) white chocolate chips

Instructions

  1. Layer Ingredients: Place all peanuts and chocolate chips into the bottom of a 6-quart slow cooker. Stir gently to combine the ingredients evenly.
  2. Slow Cook and Stir: Cover the slow cooker and heat on low for about 2 hours. Every 20-30 minutes, uncover and stir the mixture to ensure even melting and prevent scorching. Continue until all chips are fully melted and incorporated.
  3. Prepare Baking Sheets: While the mixture is melting, line two large baking sheets with parchment paper or silicone baking mats and set them aside to prepare for shaping the clusters.
  4. Form Clusters: Using a spoon or a #50 cookie scoop, drop mounds of the melted peanut and chocolate mixture onto the prepared baking sheets, spacing them evenly.
  5. Set Clusters: Allow the clusters to set at room temperature until completely hardened. This will take approximately 1 to 2 hours depending on room conditions.
  6. Store Properly: Once hardened, store any leftover clusters in an airtight container for up to 1 month. These clusters also freeze well for up to 3 months—just thaw at room temperature before serving.

Notes

  • Peanuts: The combination of unsalted dry roasted and salted cocktail peanuts balances saltiness without overpowering sweetness. Feel free to adjust the peanut types but avoid honey roasted as it may make the clusters too sweet.
  • Chocolate: While chocolate chips are preferred for ease and consistency, you can substitute chopped bar chocolate of your choice.
  • Melting Alternative: If you prefer to melt smaller batches or avoid the slow cooker, use a stovetop double boiler or microwave, but be mindful of scorch risk and the large volume of ingredients.
