- 1/2 cup crumbled blue cheese
- 1/3 cup buffalo wing sauce
- 1/4 cup chopped green onions

Instructions
- Prepare Potatoes: Boil potatoes until fork-tender, then let cool slightly. Preheat oven to 450°F.
- Smash Potatoes: Brush baking sheet with olive oil, place potatoes, smash once, drizzle with oil, salt, pepper, and garlic powder.
- Roast Potatoes: Roast for 25-30 minutes until crispy.
- Top and Serve: Add blue cheese, melt in oven, then top with buffalo sauce, green onions, cilantro, and additional blue cheese. Serve hot with ranch dressing.
