- 1 1/2 pounds Brussels sprouts

- 1 green onion, sliced thin
- 1/2 cup dried cranberries
- 3/4 cup chopped toasted walnuts
- 3/4 cup grated Pecorino Romano cheese
Instructions
- Prepare the Dressing: In a small bowl, whisk together apple cider vinegar, pure maple syrup, and extra virgin olive oil. Season with salt and pepper to taste, then set aside.
- Slice the Brussels Sprouts: Using a slicer blade on a food processor or a sharp knife, very thinly slice the Brussels sprouts. Transfer them to a large mixing bowl and add the sliced green onion and dried cranberries.
- Prepare the Apple: Cut the Granny Smith apple into matchstick-sized pieces and toss them with 1-2 teaspoons of the dressing to prevent discoloration. Add the dressed apple pieces to the salad bowl.
- Toss the Salad: Pour the remaining dressing over the salad and stir thoroughly to ensure all ingredients are evenly coated. Cover and refrigerate for at least 45 minutes to allow the flavors to meld.
