- 14 ounces canned diced tomatoes, with juice
- 14 ounces canned diced tomatoes with green chilies
- 14 ounces canned chili beans, with juice
- 14 ounces canned corn, drained and rinsed
- 14 ounces canned green beans, drained and rinsed
- 3 Yukon gold potatoes, peeled and chopped
- 4 cups beef broth
- Fresh cilantro or parsley, for garnish
Instructions
- Sauté Vegetables: Heat the olive oil in a large stockpot over medium-high heat. Add the diced onion, sliced carrots, and sliced celery. Cook until the vegetables are tender, about 5-7 minutes.
- Brown Ground Beef: Add the ground beef to the pot and cook until browned, breaking it up with a spoon.
- Add Spices and Garlic: Add the minced garlic, cumin, chili powder, oregano, salt, and pepper. Stir and cook for 1-2 minutes, until fragrant.
- Add Canned Goods and Potatoes: Stir in the diced tomatoes (both kinds), chili beans, corn, green beans, and chopped potatoes.
- Add Broth and Simmer: Pour the beef broth into the pot. Bring to a boil, then reduce the heat to a simmer. Cover and simmer for 15 minutes, or until the potatoes are tender.
- Garnish and Serve: Garnish with fresh chopped cilantro or parsley and serve hot.

- You can use any type of ground meat you prefer, such as ground turkey or ground sausage.
- Feel free to add other vegetables, such as bell peppers, zucchini, or peas.
