  • 1 (15-ounce) can white beans, drained and rinsed
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning

  • 10 ounces refrigerated cheese tortellini
  • 2 cups fresh spinach

Instructions

  1. Sauté Onion and Garlic: Melt the butter in a large pot or Dutch oven over medium heat. Add the diced onion and cook until translucent and tender, about 3-5 minutes. Add the minced garlic and cook for 30 seconds, until fragrant.
  2. Add Broth, Tomatoes, and Beans: Pour in the chicken broth, diced tomatoes (with their juices), and drained white beans. Bring to a simmer.
  3. Add Cream, Cheese, and Seasoning: Stir in the heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper. Bring to a gentle simmer.
  4. Add Chicken, Tortellini, and Spinach: Stir in the shredded chicken, cheese tortellini, and fresh spinach. Simmer for 10 minutes, or until the tortellini is cooked through and the soup has thickened slightly.
