  • 4 chicken breasts, pounded to an even thickness
  • 1/4 cup + 1 tablespoon flour
  • 1 tsp salt
  • 1 tsp pepper
  • 2 Tbsp oil
  • 4 Tbsp butter
  • 4 cloves garlic, minced
  • 3/4 cup chicken broth
  • 1/2 cup sun-dried tomatoes in oil, chopped
  • 2 cups baby spinach
  • 1 tsp oregano
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Prepare the chicken
    Pound the chicken breasts to an even thickness of about an inch. Season with salt and pepper, then dredge in flour.
  2. Cook the chicken
    Heat oil and half the butter in a large skillet over medium-high heat. Cook two chicken breasts at a time, covered, for about 4 minutes on each side until golden brown and cooked through. Transfer to a plate and repeat with remaining chicken. Wipe the pan if needed.
  3. Make the sauce
    Lower heat to medium-low and add remaining butter. Once melted, add minced garlic and a tablespoon of flour. Cook for 45 seconds, stirring constantly. Whisk in chicken stock and oregano. Reduce, then stir in cream, Parmesan cheese, and sun-dried tomatoes.
  4. Finish the dish
    Once simmering, add spinach and cook until wilted. Return chicken to pan to warm through. Spoon sauce over chicken and serve.

  • Ensure chicken is fully thawed and patted dry for better flour adhesion.
  • For a gluten-free version, use gluten-free flour.
  • Fresh garlic is recommended, but 1/2 tsp garlic powder per clove can be substituted.
  • For a lighter sauce, use half-and-half or lower-fat cream instead of heavy cream.
  • Add red chili flakes for extra heat if desired.
