- 4 chicken breasts, pounded to an even thickness
- 1/4 cup + 1 tablespoon flour
- 1 tsp salt
- 1 tsp pepper
- 2 Tbsp oil
- 4 Tbsp butter
- 4 cloves garlic, minced
- 3/4 cup chicken broth
- 1/2 cup sun-dried tomatoes in oil, chopped
- 2 cups baby spinach
- 1 tsp oregano
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
Instructions
- Prepare the chicken
Pound the chicken breasts to an even thickness of about an inch. Season with salt and pepper, then dredge in flour. - Cook the chicken
Heat oil and half the butter in a large skillet over medium-high heat. Cook two chicken breasts at a time, covered, for about 4 minutes on each side until golden brown and cooked through. Transfer to a plate and repeat with remaining chicken. Wipe the pan if needed. - Make the sauce
Lower heat to medium-low and add remaining butter. Once melted, add minced garlic and a tablespoon of flour. Cook for 45 seconds, stirring constantly. Whisk in chicken stock and oregano. Reduce, then stir in cream, Parmesan cheese, and sun-dried tomatoes. - Finish the dish
Once simmering, add spinach and cook until wilted. Return chicken to pan to warm through. Spoon sauce over chicken and serve.

- Ensure chicken is fully thawed and patted dry for better flour adhesion.
- For a gluten-free version, use gluten-free flour.
- Fresh garlic is recommended, but 1/2 tsp garlic powder per clove can be substituted.
- For a lighter sauce, use half-and-half or lower-fat cream instead of heavy cream.
