  • 175g gluten-free pasta

For the chicken:

  • 2 chicken breasts, diced into 1-inch chunks
  • 40g cornflour
  • 1 tbsp mixed herbs
  • Salt and pepper to taste
  • 2 tbsp garlic-infused oil

For the sauce:

  • 400g chopped tomatoes
  • 1 tbsp tomato puree
  • 2 tsp dried mixed herbs
  • 1 tbsp garlic-infused oil
  • 1 big handful spinach, roughly chopped
  • 1 tbsp cream cheese or mascarpone (dairy-free if necessary)
  • 1 handful cheddar cheese, grated

Instructions

  1. Cook the pasta: Prepare the gluten-free pasta according to package instructions. Drain and set aside.
  2. Prepare the chicken: In a small bowl, coat the diced chicken with cornflour, mixed herbs, salt, and pepper.
  3. Cook the chicken: Heat garlic-infused oil in a frying pan and cook the coated chicken until crispy and cooked through. Set aside.
  4. Make the sauce: In a separate pan, combine chopped tomatoes, tomato puree, mixed herbs, and garlic oil. Add spinach and cook until wilted. Add the cooked pasta.
  5. Add the cream: Stir in cream cheese to create a creamy sauce.
  6. Combine: Mix in the herby chicken and top with grated cheese.
