For the Crepes:
- 4 large eggs
- 1/3 cup butter, softened
- 1/2 cup granulated sugar

- 1 1/4 cups milk

For the Filling:
- 2 cups fresh strawberries, sliced
- 4 ounces cream cheese, room temperature
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 pint heavy whipping cream
- 3 Tablespoons powdered sugar
Instructions
- For the Crepes: Add all ingredients to a blender and blend until smooth. Refrigerate batter for 30 minutes. Heat a non-stick skillet, pour batter, cook, and flip.
- For the Filling: Blend cream cheese, powdered sugar, and vanilla. Beat heavy cream and powdered sugar until stiff peaks. Combine whipped cream with cream cheese mixture. Fill crepes with the mixture and strawberries. Roll up and serve topped with powdered sugar and whipped cream.
