Roasted Garlic
- 1 whole garlic bulb
- Extra virgin olive oil, for drizzling

Mashed Potatoes
- 2 pounds Yukon gold or butterball potatoes, peeled
- 2 teaspoons sea salt, divided
- ⅓ cup extra-virgin olive oil
- Freshly ground black pepper, to taste

- Chopped chives and/or rosemary (optional, for sprinkling)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for roasting the garlic.
- Roast Garlic: Trim ¼ inch off the top of the garlic bulb to expose the cloves. Place it cut-side up on a piece of foil, drizzle generously with olive oil, and sprinkle with sea salt. Wrap tightly in the foil and roast in the oven for 40 to 60 minutes until the garlic cloves are deeply golden brown and tender. Remove and let cool slightly.
- Make Garlic Paste: Using the back of a chef’s knife or a small masher, mash the roasted garlic cloves into a smooth paste. Set aside for mixing into the potatoes.
- Boil Potatoes: Place peeled potatoes and 1 teaspoon salt in a large pot. Cover the potatoes with water by about 1 inch. Bring to a boil and cook until potatoes are fork-tender, about 20 minutes. Drain the potatoes, reserving 1 cup of the cooking liquid.
- Mash Potatoes: Use a potato ricer or masher to mash the drained potatoes in a large bowl until smooth.
- Combine Ingredients: Fold in the roasted garlic paste, ⅓ cup extra-virgin olive oil, ½ cup reserved cooking liquid, 1 teaspoon salt, and several pinches of freshly ground black pepper. Continue folding until creamy. If desired, add up to an additional ½ cup of reserved cooking liquid for a creamier texture.
- Serve: Serve the mashed potatoes hot, optionally topped with butter, chopped chives, and/or rosemary for extra flavor.
