  • 4 boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 8 ounces sliced mushrooms

For the Creamy Parmesan Garlic Sauce:

  • 1/4 cup butter
  • 2 cloves garlic, minced
  • 1 tablespoon flour
  • 1/2 cup chicken broth
  • 1 cup heavy cream or half and half
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup chopped spinach

Instructions

  1. Cook Chicken and Mushrooms: Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then cook for 3-5 minutes per side, or until golden brown and cooked through. Remove the chicken and set aside. Add the mushrooms to the skillet and cook until tender. Remove and set aside.
  2. Make the Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant. Whisk in the flour until a thick paste forms. Gradually whisk in the chicken broth and heavy cream until smooth. Stir in the parmesan cheese, garlic powder, pepper, and salt.
  3. Simmer and Combine: Add the spinach to the sauce and simmer until it wilts and the sauce thickens. Return the cooked chicken and mushrooms to the skillet, stirring to coat them in the sauce.
