For the Salad:
- 2 (15 oz) cans chickpeas, drained and rinsed
- 3/4 cup diced celery
- 1/2 cup diced dill pickles
- 1/2 cup sliced green onion
For the Dressing:
- 1/2 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 to 2 tablespoons Dijon mustard
- 2 teaspoons red wine vinegar
- 2 tablespoons freshly chopped dill
- 2 tablespoons freshly chopped parsley
- 1/4 teaspoon garlic powder
- Kosher salt and black pepper, to taste
Instructions
- Prepare the Chickpeas: Roll and rub the chickpeas to remove skins. Discard skins. Mash chickpeas in a bowl.
- Mix Ingredients: Combine chickpeas with celery, onion, and pickles.
- Make Dressing: Whisk together yogurt, lemon juice, mustard, vinegar, dill, parsley, garlic powder, salt, and pepper.
- Combine: Add dressing to chickpea mixture, stir well. Adjust seasoning as needed.
