Instructions

  1. Preheat the oven: Set your oven to 375° F (190° C) to prepare for baking the casserole.
  2. Cook pasta and broccoli: Bring a large pot of salted water to a boil. Add the rotini pasta and cook as per package instructions for al dente. During the last 2 minutes, add the chopped broccoli florets to the boiling water. Once done, drain and rinse them under cold water to stop the cooking process and set aside.
  3. Sauté onions: In a large skillet, melt the butter over medium heat. Add the chopped yellow onion and cook, stirring occasionally, until the onion is softened and translucent, about 4 to 5 minutes.

  6. Prepare for baking: Transfer the mixture to a 13×9-inch baking dish, spreading it into an even layer. Sprinkle the remaining cheddar cheese evenly over the top.
