Instructions

  1. Heat Butter and Sauté Garlic: In a large skillet with tall sides, melt the butter over medium heat. Add the minced garlic and sauté for approximately 1 minute until it becomes fragrant but not browned.
  2. Cook the Spinach: Add the baby spinach to the skillet. Sauté for 2-4 minutes until the spinach is just barely wilted. If the skillet is too full to stir properly or you can’t fit all spinach at once, add what fits, cover for 1-2 minutes to allow the bottom layer to wilt, then stir in a folding motion and gradually add the remaining spinach.
  3. Add Cream and Seasonings: Pour in the heavy cream and add the cream cheese pieces, Italian seasoning, sea salt, and black pepper. Stir constantly to help melt the cream cheese into the sauce.
  4. Simmer and Thicken: Once the cream cheese has melted, reduce to a simmer and cook for 2-3 minutes until the sauce thickens. Note that the sauce will further thicken as it cools from hot to warm.
  5. Serve with Parmesan (Optional): If desired, sprinkle parmesan cheese on top before serving to add a savory finishing touch.
