Main Ingredients
-
- 2 eggs
- 1/4 cup milk
- 4 tablespoons whole grain bread crumbs
- 1 tablespoon sugar
- 1 teaspoon ground cinnamon
Filling
-
- 4 tablespoons low fat cream cheese (room temperature)
- 1 tablespoon honey
- 8 strawberries, hulled and thinly sliced
For Assembly and Cooking
-
- 4 slices whole wheat bread
- 3 tablespoons butter
For Serving
- Powdered sugar (for garnish)
- Whipped cream (for garnish)
- Maple syrup (for serving)
Instructions
- Prepare the egg mixture: In a medium bowl, whisk together the eggs and milk until smooth. Set aside.
- Mix breading ingredients: In a small bowl, combine the bread crumbs, sugar, and cinnamon. Pour the mixture into a shallow bowl and set aside.
- Make the filling: In a small bowl, stir together the cream cheese and honey until smooth and well-combined.
- Assemble the stuffed bread: Spread two slices of bread with half of the cream cheese mixture. Top one slice with about 4 to 6 slices of strawberries, leaving a 1/4-inch border. Place the second slice of bread on top, cream cheese side down. Firmly press the edges of the bread together to seal the filling completely.
- Repeat assembly: Repeat the process with the remaining bread, cream cheese mixture, and strawberries to create a second stuffed toast.
- Coat the stuffed bread: Dip each piece of stuffed toast fully into the egg mixture, ensuring it is coated on all sides. Then dredge it in the bread crumb mixture, covering it evenly.
- Cook the stuffed French toast: Heat a cast iron skillet over medium-high heat and melt the butter. Place the prepared toast in the skillet and cook for about 3 minutes until the bottom turns golden and crispy. Flip and cook the other side until crisp and golden brown. Repeat this process with the remaining pieces of toast.
- Serve and garnish: Sprinkle the cooked French toast with powdered sugar and add a dollop of whipped cream on top. Serve warm with maple syrup on the side.
Notes
- Ensure the cream cheese is softened to room temperature for easier spreading.
- Press the edges of the stuffed bread firmly to prevent the filling from leaking during cooking.
- For a healthier variation, use whole grain or low-calorie bread.
- If strawberries are not in season, substitute with other fresh berries or thinly sliced fruits.
