    • 1 can (15 ounces) black beans, rinsed, drained
    • 1/2 cup (116 g) mayonnaise
    • 4 ounces cream cheese, softened
    • 1 cup (113 g) mild cheddar cheese, shredded
    • 1 cup (113 g) mozzarella cheese, shredded
    • 1/2 cup (50 g) parmesan cheese, grated

Additional Ingredients

  • 1 large jalapeño, seeded, finely diced
  • 8 slices thick-cut bacon, cooked and crumbled
  • 1 medium red onion, finely diced (about 1/2 cup)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • Green onion, chopped for garnish

Instructions

  1. Mix the Main Ingredients: In a large bowl, combine the corn, black beans, mayonnaise, cream cheese, cheddar cheese, mozzarella cheese, parmesan, jalapeños, bacon, onion, salt, and pepper. Stir until all the ingredients are evenly distributed.
  2. Garnish and Serve: Top the dip with chopped green onions for garnish. Serve alongside tortilla chips or crackers for dipping.

Notes

  • This recipe works great as a make-ahead appetizer; simply prepare the dip and store in the refrigerator until ready to serve.
  • You can increase or adjust the amount of jalapeño for more or less spice.
  • For a vegetarian version, omit the bacon or use a plant-based alternative.
  • The dip pairs well with sturdy chips like tortilla chips or pretzels.
  • Use freshly shredded cheese for better melting and flavor.
