Description

This Cottage Cheese Spinach Dip is a creamy, healthy, and protein-packed dip that’s perfect for parties, gatherings, or a nutritious snack. Made with low-fat cottage cheese, Greek yogurt, spinach, and flavorful seasonings, it’s a crowd-favorite option.

  • 16 oz low-fat cottage cheese
  • 1/2 cup non-fat plain Greek yogurt (112g)
  • 10 oz frozen chopped spinach, cooked, cooled, and squeezed dry
  • Seasonings and Add-ins

  • 1 package Knorr Vegetable Recipe Mix
  • 8 oz water chestnuts, drained and chopped
  • 3 green onions, chopped
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste

Instructions

  1. Blend the Base: In a high-speed blender, add the cottage cheese and Greek yogurt. Blend until smooth, with no chalkiness from the cottage cheese remaining. This should take approximately 5 minutes.
  2. Combine Ingredients: Remove the blender blade and add the remaining ingredients directly into the blender to make it easier to retrieve all the mixture. Use a rubber spatula to combine, then transfer the dip to a large bowl.
  3. Chill and Adjust Flavor: Cover the bowl and refrigerate the mixture for 2 hours before serving. Once chilled, taste and adjust with salt, pepper, or additional garlic powder, if needed.
  4. Optional Sweetness: If the dip tastes too tart due to the Greek yogurt, you can add 1-2 teaspoons of honey to balance the flavor.

Notes

  • If you don’t have a blender with a removable blade, use a food processor. The base is very thick and will be difficult to remove from the blender with the blade still intact.
