Truffle Mixture

  • 1 ½ cups raw hazelnuts

  • ¾ cup cocoa powder
  • 3 tbsp maple syrup
  • 2 tsp pure vanilla extract
  • ¼ cup coconut sugar

Coating

  • ½ cup finely chopped hazelnuts (processed) or extra cocoa powder

  • 15-18 whole hazelnuts for the center


Instructions

  1. Prepare the Hazelnut Meal: Process 1 ½ cups of raw hazelnuts in a food processor until they become a fine meal.
  2. Combine Ingredients: Add orange marmalade, cocoa powder, maple syrup, and vanilla extract to the hazelnut meal in the processor. Process until well combined.
  3. Add Coconut Sugar: Add ¼ cup of coconut sugar and pulse the mixture once more. The mixture should start to come together and be able to form into balls. Test by rolling a small amount between your fingers; if too wet, add a bit more cocoa powder, if too dry, add more maple syrup or marmalade and process again.
  4. Prepare Coating and Tray: Spread your coating choice (chopped hazelnuts or cocoa powder) in a shallow bowl. Line a plate or tray with parchment paper and set aside. Have the whole hazelnuts reserved for the center ready.
  5. Form Truffles: Scoop 1-2 tablespoons of mixture and roll into a ball by hand. Press a whole hazelnut into the center of each ball, then roll again to seal it inside.
  6. Coat Truffles: Roll each truffle ball in the chopped hazelnut or cocoa powder coating, then place onto the prepared parchment-lined tray.
  7. Chill and Store: Refrigerate the truffles for at least 30 minutes to set. Store in a sealed container at room temperature, in the refrigerator for best texture, or freeze for later use.
