Description

This vibrant Chili Lime Garlic Noodles combine tender udon noodles with a flavorful sauce infused with garlic, lime, and a spicy kick. Perfect as a quick, delicious vegetarian entrée or side dish, it highlights bold, fresh flavors with a delightful garlicky aroma and a tangy zest from lime juice.

Ingredients

Units Scale

Noodles

  • 2 (7 oz.) packages udon noodles

Sauce

  • 8 garlic cloves, finely minced
  • 2 tablespoons water
  • 1 tablespoon sriracha
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1/4 cup oyster sauce

Cooking Oil & Garnish

  • 1/3 cup vegetable oil
  • 3 tablespoons freshly squeezed lime juice
  • 1/2 cup fresh cilantro, chopped finely

Instructions

  1. Soak Noodles: Soak the udon noodles in hot water for 5-7 minutes until they soften and start to break apart. Drain and set aside.
  2. Prepare Sauce: In a small bowl, whisk together water, sriracha, soy sauce, honey, and oyster sauce until well combined. Set aside.
  3. Cook Garlic: In a wide sauté pan over medium-low heat, add vegetable oil and minced garlic. Cook for 2-3 minutes until the garlic turns golden brown and fragrant.
  4. Add Noodles to Pan: Add the drained noodles to the garlic oil, tossing for a few seconds to coat the noodles evenly.
  5. Add Sauce: Pour the prepared sauce over the noodles. Toss with tongs to coat thoroughly and cook until the mixture thickens slightly and adheres to the noodles, about 2-3 minutes.
  6. Finish & Serve: Remove from heat, stir in lime juice and chopped cilantro, and serve immediately garnished with extra cilantro if desired.

Notes

  • You can substitute fresh udon noodles with dried ones; adjust soaking time accordingly.
  • For extra spice, increase sriracha or add chopped chili peppers.
  • Using fresh lime juice enhances the brightness of the dish; bottled lime juice can be used as a quick alternative.
  • This dish can be garnished with chopped green onions or sesame seeds for added flavor and texture.
