  • 2 to 4 tablespoons hot water, as needed
  • 1 clove garlic, grated
  • 1 (1 inch) chunk fresh ginger, peeled and grated
  • 1 teaspoon honey (omit for Whole30)
  • 1 teaspoon sesame oil
  • Pinch red pepper flakes
  • Pinch fine sea salt

Instructions

  1. Prepare the Chicken: Slice the chicken breast into strips, suitable for threading onto skewers. If using wooden skewers, soak them in water for about 30 minutes to prevent burning during grilling.
  2. Make the Marinade: In a bowl, whisk together the coconut aminos, lime juice, chili paste, sesame oil, honey (if using), salt, and ground black pepper to create the marinade.
  3. Marinate the Chicken: Add the chicken strips to the marinade, ensuring all pieces are well coated. Cover and marinate in the refrigerator for a minimum of 30 minutes, or up to 6 hours for more intense flavor.
  4. Thread onto Skewers: Remove marinated chicken from the bowl and thread each strip lengthwise onto a skewer, piercing through the middle. Discard any remaining marinade.
  5. Preheat and Prepare the Grill: Preheat grill to medium heat. Clean and grease the grill grate to prevent sticking.
  6. Grill the Skewers: Place the skewers on the grill and cook for 5 to 7 minutes per side, depending on thickness, until no pink remains in the chicken or the internal temperature reaches 165ºF.
