Instructions

  1. Heat the Oil:
    Heat 1 tablespoon of chili crisp and 1 teaspoon of toasted sesame oil in a small nonstick frying pan over medium-low heat until the mixture begins to shimmer. While the oil heats up, thinly slice the scallion for garnish.
  2. Cook the Eggs:
    Swirl the pan or use the back of a spoon to spread the chili crisp and oil mixture across the surface of the pan. Gently crack 2 large eggs into the pan and sprinkle them with a pinch of kosher salt. Allow the eggs to cook undisturbed until the whites are fully set, the yolks remain runny, and the edges of the eggs are golden and crispy, which takes about 3 to 5 minutes. Lower the heat if necessary to keep the oil from burning.
  3. Plate and Garnish:
